I plan every trip around what’s on the plate, and no country has rewarded that obsession like Vietnam. My first bowl of pho in a Hanoi alley rearranged what I thought food could be.
The magic isn’t in the fancy restaurants — it’s at 6am on a plastic stool, watching a woman who’s made the same broth for thirty years. It’s learning to balance sweet, sour, salt and heat until a dish finally clicks.
This trip is for people who travel with their appetite. We’ll eat our way from Hanoi’s old quarter to Hoi An’s lantern-lit riverside, cook a little, and understand these places the way I think you should — one meal at a time.
